It’s the new year and I am jumping back on the meal prep train! I know, I know.. meal prep scares people sometimes, but it really doesn’t have to take as long and in detail as you would think! It was scary to me too but I truly enjoy it now.

If you have ever looked at one of my recipes you know I LOVE quick and easy! (TIP: clean as you go) than your kitchen doesn’t look like a bomb went off when you get done cooking)

I do my meal prep on Sunday’s, put my music on, pour a glass of wine (or 2) and get to work. I do big meals that I can split up into containers that will last at least a few days that are easy to grab and warm up. Remember work smarter not harder. Make a big thing of rice, a few lbs of ground turkey and a number of chicken breast, because you can make so many different meals with those things. Than I can prep for the whole family so its only one day of cooking and everyone can grab and warm up their meals as they want them! A week of no dinner fights at my house is a great week!

For this one I used left over rice and left over grilled chicken.


  • rice (whatever you prefer. I use jasmine rice and I also use the boil in a bag. EASY remember)
  • chicken breast
  • black beans
  • shredded cheese
  • sour cream
  • lime
  • salsa


  • cook rice
  • grill chicken breast (you can really cook it any way you want. Bake, grill, cut up and saute)
  • add cooked rice to bottom of microwavable bowl, add chicken on top, cheese, black beans, salsa, sour cream, squeeze lime on top.

The chicken will be good in the fridge for about 3-4 days. Don’t quote me 😉 ha
